Chef’s Table in The Libraries with Olly Le Maitre and Tom Hishon
From $329pp
For one night only, renowned chefs Olly Le Maitre of the celebrated Black Estate Restaurant and Tom Hishon of kingi will come together to host a very special degustation experience, served in the sumptuous surrounds of The Libraries at The Hotel Britomart.
With just 16 seats at sharing tables, it will be an intimate evening, created for those who truly appreciate great food and wine. Over five delicious courses, chefs Olly and Tom will showcase unique flavours and techniques using in-season and locally sourced organic produce.
Born in Guernsey and raised in Wellington, Olly Le Maitre is a chef grounded in seasonality, simplicity, and respect for ingredients. With years of experience in some of New Zealand’s top kitchens, his food philosophy centres on thoughtful, produce-driven cooking that reflects the land and seasons. Now based in North Canterbury as the head chef at two-hatted Black Estate, Olly creates farm-to-table dishes that celebrate the beauty of organic, locally sourced ingredients.
The setting for this Chef’s Table event will be no less spectacular than the food: diners will start the evening with a welcome drink and delicious snacks in the relaxed comfort of The Lounge before moving to the interactive Chef’s Library and loft-like Wine Library for the mains, and returning to The Lounge for petit fours and digestifs if they wish.
This unique collaboration between Giulio and Tom combined with the opportunity to journey through the different spaces of The Libraries promises a truly spectacular experience.
